S'mores Cupcake


S'mores Cupcake 




2 1/4 cups plus 2 tablespoons sugar

1 3/4 cups all-purpose flour

3/4 cup plus cocoa powder

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup whole milk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

1 1/2 cups graham cracker crumbs (from about 20 squares)

1/3 cup unsalted butter, melted

2 cups semi sweet chocolate finely chopped

Directions
 
Preheat oven to 350 degrees.

Sift 2 cups plus 2 tablespoons sugar, flour, cocoa powder, baking powder, baking soda, and salt together into the bowl of an electric mixer. Using the paddle attachment, mix ingredients together on low speed.

In a large bowl, mix together eggs, milk, oil, and vanilla. Add to flour mixture and beat on medium speed for 30 seconds. Scrape down sides of bowl and continue mixing on medium speed for 2 minutes. Add boiling water and stir to combine; set Cupcake batter aside. (batter will be very runny)

Place graham cracker crumbs, remaining 1/4 cup sugar, and melted butter in a large bowl; stir until well combined.

Place 1 tablespoon graham cracker mixture into the bottom of each prepared Cupcake liner and pack crumbs into the bottom of each cupcake liner. Place 2 teaspoons chocolate on top of graham cracker. Save remaining graham cracker and chocolate mixture for topping.

 Fill each Cupcake three-quarters full with cake batter. Sprinkle each with remaining chocolate and graham cracker mixture. Bake for 18 to 20 min or until tops are firm and a tooth pick comes out clean, Let them sit in the cupcake pan until cool enough to remove then cool on a wire rack!

  
Marshmallow Topping


8 large egg whites

2 cups sugar

1/2 teaspoon cream of tartar

2 teaspoons pure vanilla extract

Directions

1.Place egg whites, sugar, and cream of tartar in the heatproof bowl of an electric mixer. Set over a saucepan with simmering water. Whisk constantly until sugar is dissolved and whites are warm to the touch, 3 to 4 minutes.

2.Transfer bowl to electric mixer with the whisk attachment, and beat, starting on low speed, gradually increasing to high, until stiff, glossy peaks form, 5 to 7 minutes. Add vanilla, and mix until combined. Use immediately.

Dijon Chicken ( Very Simple)

Extra Simple Dijon Chicken

4-6 Chicken breast

3 tablespoons butter

1/4 c Dijon mustard
 
1/4 c honey

1/4 t pepper



Place chicken in a 8x8 dish.

Melt butter then combine all ingredients and pore over chicken.

Bake uncovered @ 375 for 40 mins or until chicken is cooked.

Apple cinnamon Cupcake w/ vanilla Carmel butter cream

Apple Cinnamon Cupcakes
1 Box White cake mix

Follow directions on box

Add 1/2 t. Cinnamon

substitute 1/2 the oil for apple juice



Vanilla Carmel Butter Cream

1/2 cup butter

1/2 cup shortening

2/3 cup caramel sauce

4 cups powder sugar

Cream butter and shortening together add caramel sauce then sugar.


Caramel Drizzle

Make the butter cream but take out the caramel and add in about 2 tablespoons of water.

Drizzle with Caramel

Oreo Cupcakes




Chocolate cupcakes with Oreo frosting!

Cake Recipe:

2 1/4 Cup all-purpose Flour
1 2/3 Cup sugar
3/4 cup butter/margarine (softened)
2/3 Cup Baking Cocoa
1 1/4 tsp Baking soda
1 tsp salt
1 tsp vanilla
1/4 tsp baking powder
2 large eggs

Preheat oven to 350. Grease pan or line cupcakes.
In a large bowl beat all ingredients together, scraping bowl.
beat for 2-3 min

Bake cupcakes for 12 mins or until toothpick comes out clean!

Frosting

15 Oreo Cookies (separate the cream and the cookies in two different bowls)
1 Cup Shortening
1 tsp vanilla
1 pound Confectioner sugar (powdered sugar)
4 Tablespoons water

Cream together Shortening, water, vanilla and cream from oreos.
Combine confectioner sugar
add in Crushed Oreo cookies

You may need to add more water once everything is combined. Depending on the Consistency you want.

PB&J Cupcakes!


I think this sounded a lot better in my head. Don't get me wrong they did not taste bad, they were good. I used a new cake recipe and I was not a big fan of it.  The frosting may look a little funny but it was very good!

Recipe

I used a new recipe for a simple white cake. I was really not a fan of the cake I used. I suggest using a box white cake mix (can't go wrong with box mix )

I have had good reviews on the cake I used so I will pass it along to you!

Simple White Cake

1 cup white sugar
1/2 cup butter
1 eggs
1 teaspoon vanilla
1 1/2 cup all-purpose flour
1 3/4 teaspoon baking powder
1/2 cup milk

Bake at 350 for 17 mins
Cream together sugar and butter
Beat in eggs one at a time, stir in vanilla.
Combing flour and baking powder, att to creamed mixture and mix well.
Stir in milk untill batter is smooth.
fill baking cups 2/3 filled.
Bake & Enjoy!

Smucker's strawberry Jelly for the filling

Frosting

1 Cup Peanut butter (creamy)
3 cups of powdered sugar
3 tablespoons butter
4 tablespoons milk

Cream together peanut butter and butter.
Add powdered sugar and small amounts of milk, you may need a little less or a little more milk, depends on the consistency you want!


Once the cupcakes have cooled cut a little opening in the top and pull out some of the cake. Don't hollow out to much they will be to heavy and just split apart you want to be able to fit about a table spoon of jelly inside!
Top with your Yummy frosting!

Turkey Burritos

This recipe was given to me by a friend, I did change it up a little from the original recipe. It's very yummy!

Ingredients

1 lb 93% lean ground turkey
Red & Green bell pepper
Medium Onion
1 Can black beans (drained & rinsed)
2 tbsp Taco Seasoning
Black Pepper
Flour Tortillas (wheat if desired)
shredded cheese mix
10oz can Red Enchilada sauce
Sour Cream
Cilantro

Directions

Combine Turkey, Onion, Peppers, black beans, and seasoning in a large skillet. (add a couple table spoons of water to help it cook) Cook until Turkey is done. Put turkey mix in Burritos, wrap burritos. Place Burritos in a large glass baking dish. Cover with sauce and cheese, Bake at 375 for 10 minutes. Top with Sour Cream & Cilantro if desired.

Margarita Cupcakes


Cupcake mix

1 box of white cake mix

1 can of frozen Margarita mix (completely thawed and room temp)

3 egg whites

2 tbsp vegetable oil

1/2 tbsp grated lime zest

Preheat oven 350 Degrees F.
Line Cupcake Tin with your choice of liners!
In a Large Bowl, combine cake mix, margarita mix, egg whites and oil.
Add lime zest and mix completely
Advertisement:

Fill liners 2/3 of the way.
Bake 19-22 minutes. Your toothpick should come out clean when checked!
(everyone's oven is different, if they have turned golden brown on top they have been baked to long, I know from experience)

Remove cupcakes and cool completely before you frost!

Key Lime Buttercream Frosting

8oz butter (unsalted & room temp)

8oz cream cheese (softened, just let it set out while you make the cupcakes)

1 lbs powdered (confectioners’) sugar

2 tbsp fresh lime juice (I prefer Key limes & make sure you test it you can always add a little more lime)


Cream together butter and cream cheese

Slowly add powdered sugar mixing on low, mix in lime juice until nice and smooth!


(So yummy you can eat it by the spoon full)

Garnish with a slice of lime, lime candy or anything you think is cute!
